With Céline & Sébastien LeSeurre · 6th-Generation French Winemakers

From Barrel
to Bottle.

Not a tasting. An invitation into the craft.

Every other seating this summer has sold out. One remains: step beyond the tasting room and into the barrel cellar — where future vintages are tasted, discussed, and shaped before they ever reach the bottle.

The Journey · From Barrel to Bottle

Five chapters,
five wines, one afternoon.

Each guest is handed a printed booklet and walked through the cellar chapter by chapter — a wine, a pairing, and the story behind it. Here is a glimpse of what awaits. The rest, you discover with us.

  1. I

    Celebration

    The Art of Sabrage

    Barrel Room

A saber, a ceremony as old as Napoleon's cavalry, and the only 2012 Blanc de Blancs we have ever aged this way.

2012 Sparkling Blanc de Blancs — Late Disgorged

paired with Gougères with Aged Comté · Blini, Crème Fraîche & Smoked Trout

  2. II

    Craftsmanship

    From Barrel to Glass

    The Cellar

Where oak breathes, wine evolves, and the angels take their share — a living Solera that remembers every vintage since we opened our doors.

    Sparkling Solera

paired with Fresh Bread, Truffle Butter & Jambon Blanc

  3. III

    Precision

    Dégorgement à la Volée

    Bottling Line · Secret Library

A centuries-old technique performed entirely by hand — the frozen plug removed, every precious bubble preserved.

    2022 Sparkling Brut

paired with Walnuts & Duck Breast

  4. IV

    Rebellion

    The Living Wine

    Two Barrels · 571 Bottles

Born of spontaneous fermentation, never commercially released — a wine that chose its own path, and can never be made again.

2020 Chardonnay Barrel Select No. 5

paired with Charles Arnaud 12-Month Raw-Milk Comté

  5. V

    Indulgence

    L'Or de la Vigne

    Private Tasting Room

Grapes left on the vine until December, touched by noble rot — and the first public taste of a wine not yet released.

    2024 & 2017 Riesling Late Harvest

paired with Brioche, Foie Gras, Quince Paste & Choux Pastry

“Every great bottle begins long before it reaches the table.”

The Invitation

A rare look behind
the scenes.

Join Céline & Sébastien LeSeurre in the barrel cellar for an intimate gathering inspired by the traditions of French wine culture — where wine, food, conversation, and craftsmanship come together.

Together, we will explore wines directly from the barrel, discuss the vintage, discover blending decisions, and share the stories behind each wine as it evolves toward its final expression.

Why this experience is different

Most tastings pour you a glass.
This one hands you the keys.

01

Not the tasting room — the cellar

You won't sit at a counter. You'll stand among the barrels where the wine is still becoming itself, tasting vintages months before they're bottled.

02

Hosted by the winemakers, not a guide

Céline & Sébastien lead it personally — six generations of French winemaking, explaining the blending and vinification choices in their own words.

03

One seating left. That's all.

Every other seating this summer has already sold out. This last afternoon isn't scaled for crowds — it's built to be personal, and it won't be repeated this year.

Your Experience Includes

Ninety minutes,
shaped by hand.

More than a tasting, this is an opportunity to spend time with the people behind the wines.

  • 01

A welcome glass of Domaine LeSeurre sparkling wine

  • 02

An intimate exploration of the vintage, the art of blending, and the decisions that shape each wine

  • 03

A behind-the-scenes look at our traditional sparkling wine production and winemaking philosophy

  • 04

French-style cheese and charcuterie boards served in the cellar

  • 05

Personal conversations and storytelling with Céline & Sébastien LeSeurre

  • 06

A rare opportunity to experience the winery through the eyes of its owners and winemakers
